Preparation Time: 5-10 minutes
Ingredients:
2 cups fresh pineapple cut into chunks
2 Tablespoons finely chopped fresh
mint leaves
1 teaspoon lime zest
Juice of 1 lime
1 cup low fat, light vanilla yogurt
(served with the fruit)
Directions:
- Combine and stir ingredients into
medium sized bowl
2. Allow mixture to sit for approximately 10 minutes (the longer you let it sit, the more developed the mint flavor will be)
3. Place yogurt in a clear glass and top with mint
pineapple mixture
** Note, try with any flavored yogurt, such as strawberry, or coconut. You can also try with different fruit such as watermelon.**
