Roasted Garlic Parmesan Chickpeas

Preparation Time:     10 minutes

Cooking Time:           45-60 minutes




1- 15oz can chickpeas

2 teaspoons olive oil

1 clove garlic, finely minced

2 tablespoons grated parmesan cheese

¼ teaspoon pepper



  1. Preheat oven to 400 degrees.
  2. Finely chop garlic clove and set aside.
  3. Rinse and drain chickpeas, then dry them off using paper towels. Make sure they are completely dry!
  4. In a medium size bowl, toss chickpeas with olive oil, minced garlic, parmesan cheese, and pepper.
  5. Line a baking sheet with parchment paper, aluminum foil, or spray with non-stick cooking spray. Spread coated chickpeas out on baking sheet in a single layer.
  6. Bake for 45 minutes or until chickpeas become crunchy. Be sure to toss chickpeas around on baking sheet a few times while roasting to ensure they do not stick.
  7. Enjoy! Store leftovers in an airtight container.




Recipe Modification:

For a sweet version, toss chickpeas in 2 teaspoons olive oil, 1 tablespoon honey, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ¼ teaspoon salt. Roast at 400 degrees for 45 minutes.
