Ingredients:
1- 15oz can chickpeas
2 teaspoons olive oil
1 clove garlic, finely minced
2 tablespoons grated parmesan cheese
¼ teaspoon pepper
Directions:
- Preheat oven to 400 degrees.
- Finely chop garlic clove and set aside.
- Rinse and drain chickpeas, then dry them off using paper towels. Make sure they are completely dry!
- In a medium size bowl, toss chickpeas with olive oil, minced garlic, parmesan cheese, and pepper.
- Line a baking sheet with parchment paper, aluminum foil, or spray with non-stick cooking spray. Spread coated chickpeas out on baking sheet in a single layer.
- Bake for 45 minutes or until chickpeas become crunchy. Be sure to toss chickpeas around on baking sheet a few times while roasting to ensure they do not stick.
- Enjoy! Store leftovers in an airtight container.
Recipe Modification:
For a sweet version, toss chickpeas in 2 teaspoons olive oil, 1 tablespoon honey, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ¼ teaspoon salt. Roast at 400 degrees for 45 minutes.
